Black garlic is produced by fermenting regular garlic in extreme heat for over a month. The result is much less potent in both taste and smell, but far more powerful when it comes to health benefits. Black garlic has antioxidant levels twice as high as regular garlic due to the antioxidant amino acid S-Allylcysteine, which is produced during the fermentation process. A Japanese study also found that black garlic helps to lower risk of cancer and cardiovascular disease.
